Feline Friday!! December 23, 2022


Lucy's First Christmas!  
In the late fall of 2010 we discovered this wee little kitten
wandering in our backyard. She was quite afraid of us,
but after luring her with food over a few days we convinced
her that we were good humans and she allowed us to bring
her into our home and our hearts. 
This photo is of Lucy under our Christmas tree.
We send lots of thanks to everyone who adopts stray
animals needing a caring and loving home.

The weather for the next few days is going
to be cold and icy! I am thankful for many things:
1. Our weather folks have given us fair warning
and good advice on what to do!
2. My smart husband planning ahead for bad weather by
 setting up a generator when we first moved here four years ago!
 Prior planning prevents piss poor performance!
That's what he always says !
3. And we are so thankful for all our neighbors who 
help each other all the time- not just in bad weather!

In 1982 I traveled to Greece with my youngest son who was 15 at the time. We only stayed in Athens for a bit before either taking a bus or a train to different towns. It was quite the experience and we immediately discovered the delicious local cuisine! Our favorite lunch was a baguette with sliced tomatoes and tzatziki and  our favorite place was the island of Hydra !

It was quite the adventure! After exploring Greece for 2 weeks we then went on to Egypt....but that is another story!

 Greek Tzatziki recipe

2 cloves garlic, 1 medium cucumber, 1 cup plain Greek yogurt,1Tbl lemon juice,1Tbl olive oil, 1 Tbl dill seed and pepper. Mash garlic, peel cucumber and scrape out seeds by cutting in half length wise, scooping out with a spoon and then mince finely or use a cheese grater. Mix with garlic and then add the remaining ingredients. Stir well and then chill in the refrigerator for at least 2 hours. This will keep well for quite a few days. Enjoy!

Awww Monday! December 19, 2022

My computer was in the Geek's workshop most of last week. Nothing serious, just time to be fluffed and buffed! While I patiently waited I kept busy by cooking meals I had not made for quite awhile. To say the least Russell was smiling.


Here are the ingredients shown for the Kofta Kebabs.
And here's the list of ingredients:
4 garlic cloves minced, 1tsp kosher salt, 
1# ground lamb, 3Tbl minced onion, 3Tbl fresh chopped Italian parsley. 1Tbl coriander, 1tsp cumin, 1/2 Tbl cinnamon, 
1/2 tsp allspice, 1/4 tsp cayenne pepper and 1/4 tsp black pepper.
( all spices are ground ) 


Mash garlic into a paste with the salt, mix into the lamb along with the onion, parsley and all the spices.
 I start out using a fork, but always end up using my hands.
Form into 28 balls. ( I make my meatballs a bit bigger and usually end up making about 18. ) Flatten into a 2"oval- put on the baking sheet and cover with saran wrap and place in the refrigerator for at least 30 minutes or up to 12 hours. Because I make the balls bigger I just flatten them a bit.


Once you remove the meatballs from the refrigerator
 set your oven's broiler to medium heat. Broil for about 
6 minutes. Turn over occasionally until done. 
Usually takes about 6 minutes for medium.  


Serve with sliced tomatoes, home made baguette
and Greek Tzatziki. Tomorrow I will share
the recipe for Greek Tzatziki. YUMMY!

Today we had an amazing wildlife show
out our dining room window. I had
purchased some shelled peanuts in 
the pet store to put out for the squirrels.
And I also put out bird seeds for the birds to enjoy!
FYI: If you put out peanuts in the shell they
make a mess for someone to clean up!
So, not only did the peanuts attract the 
squirrels, but also Steller Jays, a Flicker
and several Varied Thrushes
They also enjoyed the bird seeds.
I thought about making a small film, but when I
thought about it I realized it would spook
all the critters and they would leave. 
So I just took one photo and just enjoyed the show!
