Feline Friday and The 2021 A to Z Challenge B is for Beef Barley Soup!!!


Oh my I do love this soup!!!!


 Beef Barley Soup


Ingredients

1 pound lean beef stew meat

Salt and freshly ground black pepper, to taste

1 tablespoon vegetable oil

2 teaspoons extra-virgin olive oil

1 large onion, chopped

3 carrots, chopped

3 celery stalks, chopped

5 cloves garlic, chopped

2 tablespoons fresh thyme leaves

1 gallon water

1 cup pearled barley

Directions

Allow the meat to sit out at room temperature for approximately 15 minutes. Season all over with salt and freshly ground black pepper.

Heat the vegetable oil in an 8-quart stockpot over high heat. When almost shimmering, add the meat and cook until browned on all sides, about 10 minutes total. Remove the meat to a bowl and reduce heat to medium.

Add the olive oil, onion, carrots, celery, garlic, and thyme. Cook until softened, about 7 to 8 minutes. Stir with a wooden spoon and scrape up the brown bits at the bottom. Add the beef back to the pot and cover with the water. Increase heat to high and bring to a simmer, about 10 minutes.

Once it reaches a simmer, reduce heat to medium-low and cook for 1 ½ hours. Add the barley and cook until done, about 25 to 30 more minutes. Remove from heat and serve.

  1. That sounds delicious! I would have to omit the celery though. I have an unnatural loathing of it bordering on a phobia. Even hearing someone crunch a stick of raw celery makes me cringe. I even have goose bumps come up on my arms now just thinking about it!

  7. today is definitely a soup day in Dixie. High barely out of the 40's and it is blustery. We're having white bean, spinach and sausage soup for supper.
