Quick and Easy Borscht
Ingredients:
1/2 head (1.5 #) cabbage, core removed and shredded
1 chopped carrot, 1.2 cup chopped onion
1/1/2 cups vegetable or chicken stock or broth
1 can (15 oz) Great Northern beans rinsed and drained
1 can (14.5 oz) diced tomatoes with juice, slightly pureed
1 can (8oz) tomato sauce
1 can (14.5 oz) pickled beets coarsely chopped with juice
1/2 tsp salt, freshly ground pepper to taste
sour cream for topping
Directions: In a large soup pot over medium heat, combine all ingredients except the sour cream. Bring to a boli. Reduce heat to medium-low and simmer, covered, until vegetables are tender, about 30 minutes. Add more stock if soup is too thick. Serve in bowls with a dollop of sour cream.

It's a beautiful color, but I don't like cabbage (except in potstickers and eggrolls) or beets (in anything. The boys sure look like they're having fun! Triple trouble!

Love seeing those smiles. Boys are such amazing people. We love spending time with all the grands but the two brothers Brody and BLake are such little hams. ALways enjoying all these great recipes.
