2021 A to Z Challenge and Happy Tuesday! April 20, 2021


 Here are just three of my Great Nephews....
and I do mean GREAT! I am so proud of them!

And now for the soup of the day!



Quick and Easy Borscht 
Ingredients:
1/2 head (1.5 #) cabbage, core removed and shredded
1 chopped carrot, 1.2 cup chopped onion
1/1/2 cups vegetable or chicken stock or broth
1 can (15 oz) Great Northern beans rinsed and drained
1 can (14.5 oz) diced tomatoes with juice, slightly pureed
1 can (8oz) tomato sauce
1 can (14.5 oz) pickled beets coarsely chopped with juice
1/2 tsp salt, freshly ground pepper to taste
sour cream for topping
Directions: In a large soup pot over medium heat, combine all ingredients except the sour cream. Bring to a boli. Reduce heat to medium-low and simmer, covered, until vegetables are tender, about 30 minutes. Add more stock if soup is too thick. Serve in bowls with a dollop of sour cream.

  3. It's a beautiful color, but I don't like cabbage (except in potstickers and eggrolls) or beets (in anything. The boys sure look like they're having fun! Triple trouble!
