2021 A to Z Challenge and Awww Monday April 12, 2021

AWWWW Monday Frustration!!!
Argh, I am finally back online after being hacked by
someone who managed to hack into my computer.
I was remiss when I logged onto someone's blog that was
not secure. I did not notice that their url did not begin with
"https://" Their url began with "http://" !! Not having
the "s" meant the blog was not secure. So folks, if your
blog url is missing the "s" I won't be visiting you!
I have learned a very expensive and frustrating lesson!
Meanwhile, here's today's soup! Enjoy!

Just Peachy Yogurt Soup   serves 4

Here is a delicious recipe I found in the book "Desperation Dinners!".  This would be such a refreshing dish on a hot summer day!

1 bag (16 ounces) frozen sliced peaches

2 cups orange juice

2 tablespoons honey

1 carton (16 ounces) vanilla-flavored low-fat yogurt

1 cup blueberries, fresh or frozen

1.  Pour half the peaches, the orange juice, and honey into the container of a blender.  Process on high, stopping to stir if necessary, until the peaches are a smooth puree.  Add the remaining peaches and blend on high, stopping frequently to stir, until all the peaches are smooth.

2.  Add the yogurt and pulse until just blended.

3.  If using frozen blueberries, pour them into a colander and run cool water over them for 1 minute to defrost slightly.

4.  To serve, pour the soup into bowls and sprinkle 1/4 cup blueberries on top of each serving.

This soup is most different, but I'll give it a try. Sounds like a wonderful summer soup.

  5. Hi Kathe,

I'm continuing to play catch up. This soup recipe sounds more like dessert. :) I was sorry to read about your computer woes when someone hacked yours. What a waste of talent! If only these geniuses used their smarts for good.

I love comments and will attempt to reply to each one. However, lately I have been getting "Unknown" comments that are linked to some sort of web page. I will never open this sort of comment and will immediately mark as spam. I am not interested in opening something that could be detrimental to my blog security etc. Never have enjoyed hackers! Thanks!
