mixed with garlic, tahini and a garnish of olive oil and parsley.
Absolutely delicious with pita bread.

Never would have thought to make dip out of eggplant, thanks for this great idea! I'm not usually a fan but I know its really healthy so the new twist will be fun to try.
ReplyDeleteI tried to bake Eggplant a few ago and it was horrible. Then I was watching a cooking show and she did the same thing I did. I will just have to leave my eggplant to someone else's cooking.
