Feline Friday! December 17, 2021


Here is a sweet neighbor Baila! I am taking care of her while her family is away for a bit. Baila is a very very sweet cat! She is fun to be with and play with too!

Well our little Kitty pals are adjusting to us. 

Fifi has actually allowed me to come in where 

she was reclining and she did NOT run under the bed! 


She allowed me to almost pet her with one finger!
She did sniff my finger before turning her nose up!


Meanwhile Lola chowed down her food before 
wanting to go for a walk.


So sorry Lola- we are not allowed to take you outside as we don't want to have you get lost! You will have to wait for your family to return in a few days!

And meanwhile Muffin is inhaling her food!

2021 A to Z Challenge and Feline Friday!


I am cat sitting for our friends while they are having a much needed vacation with their kids. So, I spend about an hour a day playing and petting this lovely cat! Soon they will be home and this sweetheart will be soooo happy!  
Now slurp, onto the soup!  

N is for New England Lobster and Corn Chowder! 


New England Lobster and Corn Chowder

Makes 8 Servings

INGREDIENTS

2 10-ounce frozen uncooked lobster tails, thawed, or 1 pound freshly cooked lobster meat, cut into bite-size pieces

8 cups frozen yellow corn kernels (about 2 1/4 pounds), thawed

3 cups low-salt chicken broth

8 bacon slices, chopped

2 cups chopped onions

3/4 cup peeled finely diced carrots

2/3 cup finely diced celery

1/4 teaspoon cayenne pepper

3 cups bottled clam juice

1 1/2 cups whipping cream

6 tablespoons sour cream

2 tablespoons (1/4 stick) butter

3 tablespoons chopped fresh chives

PREPARATION

If using thawed frozen lobster tails, cook in pot of boiling water until almost cooked through, about 6 minutes. Drain. Cool. Using kitchen shears, cut lobster shells open. Remove lobster meat; cut into bite-size pieces. Discard shells.

Purée 4 cups corn with 1 1/4 cups broth in processor until almost smooth.

Sauté bacon in large pot over medium heat until crisp, about 5 minutes. Transfer bacon to paper towels. Pour off and discard all but 3 tablespoons drippings from pot. Add onions to pot; sauté until light golden, about 5 minutes. Add remaining 4 cups corn; sauté 3 minutes. Add carrots, celery, and cayenne; sauté until vegetables soften slightly, about 5 minutes. Add clam juice and 1 3/4 cups broth; simmer 10 minutes. Stir in corn puré and whipping cream; simmer 5 minutes. Season with salt and pepper. (Lobster, bacon, and soup can be prepared 1 day ahead. Cover and chill lobster and bacon separately. Cool soup slightly; chill uncovered until cold, then cover and keep chilled. Bring bacon to room temperature and bring soup to simmer before continuing.) Remove soup from heat; stir in sour cream.

Melt butter in medium nonstick skillet over medium heat. Add lobster meat and sauté just until heated through, about 2 minutes. Ladle soup into bowls. Garnish each serving with lobster pieces, bacon, and chives and serve.

Feline Friday and the 2021 A to Z Challenge!! H is for Hot and Sour Soup!!

While our dear French friends are on
a much needed vacation we are cat-sitting
this darling kitty! She was very upset
the first few days understandably, but now
is settled in being by herself most of the days
but soooo happy when we visit for a few hours!
Every day we come over around 9am and stay til 11am.
We cuddle with her and play with her and
I bring her a few cats treats to eat each day.
You will see a few more photos of her over the next few weeks!

Now onto the soup!!!


 Hot and Sour Soup  6 servings

This rich, earthy soup is given the perfect amount of tang from soy sauce and ginger. To make it vegetarian, substitute the chicken stock with vegetable stock.

Ingredients

14 ounces firm water-packed tofu, drained

1 3/4 tablespoon water, divided

1/2 ounce dried, sliced shiitake mushrooms

4 cups fat-free, low-sodium chicken broth

1/4 cup white vinegar

2 tablespoons low-sodium soy sauce

1 tablespoon chopped ginger

2 teaspoons sugar

3/4 teaspoons white pepper

1 clove garlic, minced

2 1/2 tablespoons cornstarch

1/2 cup bamboo shoots, drained

1 large egg, lightly beaten

1/2 cup thinly sliced green onion tops

Directions

Drain tofu, and place on several layers of paper towels. Cover tofu with several more layers of paper towels; top with a cast-iron skillet or other heavy pan. Let stand 30 minutes. Discard paper towels. Cut tofu into 1-inch cubes.

Bring 1 ½ cups water to a boil in a small saucepan; remove from heat. Stir in mushrooms; let stand 30 minutes. Stir in broth and next 6 ingredients (through garlic); bring to a boil. Reduce heat, and simmer 10 minutes, stirring occasionally. Combine ¼ cup water and cornstarch in a small bowl, stirring with a whisk until smooth. Stir cornstarch mixture, tofu, and bamboo shoots into broth mixture; bring to a boil. Cook 1 minute, stirring occasionally; remove from heat. Drizzle egg into broth mixture (do not stir). Place pan over low heat; cook 1 minute. Stir soup gently to combine. Sprinkle with onions.
